Lithuanian Cold Beet Soup (Šaltibarščiai)

Light, refreshing, and full of color — Šaltibarščiai is one of Lithuania’s most beloved summer dishes.

This cold beet soup is made with kefir, cucumbers, dill, and hard-boiled eggs — simple ingredients that create a beautiful balance of flavor and freshness.

🧂 Ingredients



  • 3 medium beets, cooked and grated
  • 2 cups kefir or buttermilk
  • 2 cucumbers, diced
  • 2 boiled eggs, chopped
  • 1 tbsp fresh dill, chopped
  • Salt to taste
  • Optional: a squeeze of lemon or vinegar for brightness






🍴 Instructions



  1. Prepare the beets: Boil or roast them until tender, then peel and grate.
  2. Combine: In a large bowl, mix grated beets, cucumbers, dill, and chopped eggs.
  3. Add kefir: Pour in the kefir or buttermilk, stir gently until the color turns bright pink.
  4. Chill: Refrigerate for at least 2 hours before serving.
  5. Serve: Enjoy cold, traditionally with warm boiled potatoes on the side.
